This extraordinary white wine is a touchstone for all dry, fresh, and unfortified wines produced in southern Spain. Made with 100% Pedro Ximénez sourced from sustainably-grown, 50+ year-old vines in Sierra de Montilla (the ‘Grand Cru’ of Montilla-Moriles), this tangy and refreshing wine is fermented in traditional concrete amphora (tinajas) before spending eight months under flor before bottling.
