Pinot Noir is handpicked in the morning and brought into the winery cool from Perrydale Vineyard in the Van Duzer Corridor and Sunset View in the Eola-Amity Hills. It is immediately whole bunch pressed using a Champagne cycle (long and slow - light pressing, minimal turns/breaking of the cake). We only use the light press fractions and at this point the juice has a light pink hue to it that naturally drops out over the settling and fermentation period as those pigments adhere to yeast and protein and eventually drop out. It is fermented in stainless steel, cool and slow. There is no secondary fermentation however the wine is sur lie aged with light stirring to build mouthfeel.
