The Freestone Valley experienced several days under smoke in 2020, but we were able to harvest the fruit and review options at the winery. Although not a vintage for Ernest single-vineyard wines, we wanted to explore what was possible with some thoughtful vinification and filtration. The primary fermentation included whole cluster for a supportive tannin in the finished wine. After press, the wine was aged in neutral oak. Leveraging the ARC process from VA Filtration, the wine went through a proprietary resin and carbon filtration. Clean burgundy concentrate was added to complete the wine and an additional cross-flow filtration was executed before sterile bottling. Less than 50ppm total sulfur. Cheerful and juicy with clear characteristics of a cool climate wine with aromas ranging from concentrated cherries and pomegranate seeds.
