The grapes for this wine come from vineyards located in Manchuela, Castilla. Average yield is 2.4 t/acre. Only perfectly mature clusters are harvested in the third week of September. Cold maceration followed by a six-day fermentation with two pump-over’s daily. Controlled micro-oxygenation during the fermentation. Eight-day post fermentative maceration.
