To achieve a style of Carneros Pinot Noir that delivers varietal and regional integrity, Saintsbury focused on a careful, methodical exercise in blending. In late winter, after all lots have completed malolactic fermentation and have been resting in small French oak barrels, they begin the search for their “Carneros” bottling - those lots that show the right balance of tannin and acid, coupled with rich and vibrant fruit flavors. 10 months in 30% new French oak barrels (François Frères and Taransaud). Aromas of forest floor, dark cherry, plum, and mahogany intermingle on the nose. On the palate, a delicate entry transforms into a smooth and broad mouthfeel, finishing with long and enticing dark fruit flavors and a touch of sweet smokey oak.
