80% Sangiovese, 15% Canaiolo, 5% Syrah. In the heart of the Chianti Classico hills between Florence and Siena, lie the prized vineyards of the Isole e Olena estate. The centuries old, southwest facing vineyards cover 290 hectares of land and are situated approximately 400 meters above sea level. Paolo De Marchi took over the family-owned estate in the mid-1970s and managed to remain faithful to the traditional methods of winemaking passed down to him by previous generations, while simultaneously becoming known as a pioneer in using non-traditional varieties. The grapes used for the Chianti Classico are all estate-grown and hand-harvested. The must is fermented in temperature controlled stainless steel tanks with approximately 15 days maceration. During fermentation, delestage and pumping over takes place twice a day. Delestage is a method of extraction during fermentation that gives wines of good color and soft tannins. After malolactic fermentation is complete, the wine is racked into barrels & 4000 liter casks where it matures for about a year. It is then bottled and released after 3-4 month. It is intended for drinking within 5-8 years. Proprietor and winemaker, Paolo De Marchi, is considered a pioneer in introducing foreign grapes to the area, such as Chardonnay, Cabernet Sauvignon, and Syrah.
