The grapes come from 14 year-old vines grown in a sub-surface limestone layer beneath a sandy loam topsoil. The wine is matured in French oak for a short period of time. Carbonation is the process of dissolving carbon dioxide in a liquid and involves carbon dioxide under high pressure. When the pressure is reduced, the carbon dioxide is released from the solution as small bubbles, which causes the solution to become effervescent. There is no secondary fermentation. The excess gas in the wine is compressed upon bottling, and effervescence will appear when the bottle is opened. At the saturator outlet, the wine is immediately bottled with a counter-pressure filler. The wine is then disgorged and a small amount of "liqueur" (sweetener) is added. 100% Shiraz.
