Cabernet lovers should look to Australia for terrific examples, none more distinct than versions from Coonawarra. The unique redhued “terra rossa” soils of the region produce wines that find a balance between muscular, dense tannins and freshness, with wonderful savory details. I'm always impressed by how the tannins, despite their power, never get in the way of the flavors. Penley winemakers Kate Goodman and Lauren Hansen have an impressive lineup of Cabernets, with the Phoenix bottling the most approachable when young; it's also an incredible value. The wine is aged in a mixture of primarily used and some new French oak barrels for 12 months to manage the tannins, then the wine is transferred to stainless steel to preserve the freshness and highlight the fruit flavors.
