White Wines

White wines range in color from faintly yellow to amber that is produced from the juice alone of dark- or light-colored grapes. White wines are usually fermented at cooler temperatures than reds which is now much more available due to advances in technology and refrigeration. Yellow and green grapes are the most popular style for white wine production. In some instances other shades of grapes even pink grapes can still make a clear white wine. After the grapes have achieved their desired ripeness they are sorted and pressed. The main difference between red and white wine production is two key factors. #1 The grape juice typically does not macerate on the grape skins often referred to as no skin-contact. #2 After grapes are crushed they are also pressed. Pressing the grapes separates the juice and any fibrous pomace or grape solids to ferment a clean pure juice. This can preserve freshness and clarity of the white wine being made without any added tannins or ""off"" flavors coming from the organic material of white grape skins. Sometimes additional time in barrel especially during fermentation can create more robust toast, vanilla and overall oak profile in the finished wine. Other important factors influencing these flavors and creamy flavors involves two highly regulated processes: Lees stirring and malolactic fermentation.

Founder Herb Becker opened the Wheat Ridge store in 1961, & moved it to the current location in 1974. Herb sold the store to Alan Freis, current owner Jim Shpall's father-in-law, in 1980.
